Potato Salad Tips for Dad’s 70th

I'm looking for some help with potato salad for my dad's 70th birthday. He's serving burgers, and I want a side that goes well with them. I don't make potato salad often, so I'm a bit stuck. Does anyone have a favorite recipe or a special twist that really makes it pop? Also, any advice on keeping mayo-based salads cold for outdoor parties would be great. Trying to avoid the store-bought stuff if possible.
 
Dice 10 golden (midsized) potatoes, boil until fork tender, 2 eggs boiled and diced, 3/4 cup mayo, 2 tablespoons mustard,
3 tablespoons sweet relish, teaspoon Tony Chachares - - fold until a little creamy (without breaking up potatoes into mush).

double the bowl up with ice in the bottom one - - keep in the shade (covered)

It's not complicated, heck even people in Alabama can do it right. :ROFLMAO:
Don't overcook the potatoes!!
It's not called mashed-potato salad! 😞
